colorless crystal or white crystalline powder, odorless, with sourness. It is the mixture of equal d-tartaric acid and l-tartaric acid, usually containing one or two crystalline water. It will lose water when heated to 100°C. It is stable in the air. Density1.697. Its solubility in ether is about 20.6(20°C)，in ether about 1%，and in ethanol about Solubility5.01(25°C). |
Use |
It is widely used in food, pharmaceutical, chemical, light industry and such industries. For example, it can be used as beer foaming agent, food acidifying agent and taste improve, and can also be used in cooling drink, candy, juice, sauce, cold dish, yeast powder and so on. Its sourness is 1.3 times of that citric acid. It is especially suitable to be sued as acidifying agent of grape juice. It plays an important role in tanning, photographing, glass, enamel, telecommunication instrument and such industries.
